Yellow Tea

Yellow tea, a rare Chinese speciality, starts as carefully hand picked young buds and leaves which are withered, and pan-fired or steamed in the same way as green tea.  Then the unique magic happens!  The tea is lightly wrapped, gently heated and rested to create its defining golden colour and delicious mellow flavour.
